Gluten free and vegan chocolate doo-dads are about the only dessert I can handle making. I just don’t like to measure and deserts consist of measuring.

I’m not a baker AT ALL, so this is right up my alley. I’m grateful that it does have less sugar than a lot of cookies.
Chocolate DOO-DADS
MELT 1/2 cup nut butter (I use organic peanut butter with ingredients of only peanuts and salt) in skillet on medium high heat.
STIR in 3/4 cup enjoy life dark chocolate chips, and melt. Take off the heat.
ADD 1 cup organic crispy brown rice cereal.
COAT cereal with mixture.
SPOON onto wax lined cookie sheet with a tablespoon and refrigerate for at least an hour.

Chocolate is so good and I’ve stopped making these because I switched over to a small square of dark chocolate a day. They say dark chocolate is good for you.
Speaking of sugar, I’ve tried to cut back on the little bit of it that I use. Coffee is the only thing I add a little bit of my honey mixture to in the morning. Although, I do add a little honey to sauces sometimes. And of course some of the carbs that I still eat that turn into sugar. Sugar, ugh, it's everywhere!
I’ve been trying to cut down on the coffee this year. It’s going alright so far, only because I’ve had bronchitis for the last 12 days. I switched to caffeinated green tea in the morning with lemon and hope to eventually get off the caffeine also. I’ve read that coffee can be troublesome for thyroid disease and I’m not sure if it’s the caffeine or the coffee.
We are all taking baby steps to create better health for ourselves and our families. I have found that my baby steps have added up over the years and eventually – maybe one day – I will be at my optimum health if I stay on track.
